SOIL TYPE

Low in organic matter. Mainly sandy with a high silica content, allowing these vineyards to survive phylloxera, thus belonging to the limited number of hectares in this DO that possess these characteristics.

VINEYARD

Vines from the Pago de Chapirete, located in the Valladolid town of Alcazarén. Pre-phylloxera vineyards cultivated using organic farming practices and trained in goblet style. Yield is less than 2,500 kg/ha. The special climate of the area provides low rainfall during the summer, resulting in perfect grape ripening.

HARVEST

Manual harvesting using 20 kg boxes, allowing the grapes to arrive intact at the winery, along with an initial selection of grapes in the field, followed by a second selection of bunches on a table at the winery.

PRODUCTION

Fermentation in 500L French and Central European oak barrels, seeking the perfect combination between fruity aromas and those from delicate aging in wood.

TASTING NOTES

Pale yellow with golden tones. Intense and complex aromas of ripe fruit and spices in perfect balance. Broad and voluminous while being delicate and silky, with a great number of nuances and a long finish. Very persistent.

SERVING

Perfect pairing as an appetizer with Iberian ham, nuts, and to accompany creamy and aged cheeses, smoked fish (salmon, trout, anchovies), and white meats (turkey, chicken).
