PRODUCTION

The extraction of the must is done at low pressure and in an inert atmosphere, thus avoiding possible oxidation and preserving all the aromas typical of the grape. Fermentation in stainless steel tanks at low temperature for 10-12 days.

TASTING NOTES

Pale yellow with greenish reflections. Very fine nose with a predominance of herbaceous notes (fennel and mint), white fruit (green apple), and aniseed hints. On the palate, it presents structure and volume with a slight bitterness typical of the variety.
