SOIL TYPE
Low in organic matter. Mainly sandy with a high silica content, allowing these vineyards to survive phylloxera, thus belonging to the limited number of hectares in this DO that possess these characteristics.
VINEYARD
Centenary vines from the Pago de Chapirete, located in the Valladolid town of Alcazarén. Pre-phylloxera vineyards cultivated using organic farming practices and trained in goblet style. Yield is less than 2,500 kg/ha. The special climate of the area provides low rainfall during the summer, resulting in perfect grape ripening.
HARVEST
Manual harvesting in 20-kilo boxes, followed by a manual selection table, choosing the bunches with the best characteristics for this type of wine.
PRODUCTION
To preserve aromas, we carry out a subtle process where the extraction of the must is done at low pressure and in an inert atmosphere, controlling oxidation at all times. Fermentation in stainless steel tanks at low temperature for 10-12 days.
TASTING NOTES
Pale yellow with golden tones. Very complex nose with aromas of herbaceous notes (fennel and mint), white fruit (apple), and a mineral touch. Broad, intense, and persistent palate. Slightly oily and varietal texture.
